Stir-Fry Time

 

 

What's faster than takeout? Try this superquick meal

with frozen vegetables and tofu. Serve with steamed

brown rice; cucumbers tossed with rice vinegar; Thai

chili sauce, if desired.

 

 

 

Ingredients

 

 

- - Sliced green of 2 scallions

- - Juice of 1 lime

1 - package (6 oz.) pressed tofu, preferably with

Thai seasonings

3 tbsp. low-sodium soy sauce

2 tsp. freshly grated ginger

2 cloves garlic, minced

1 - bag (16 oz.) frozen stir-fry blend vegetables

 

 

Preparation - Estimated cooking time: under 30 minutes

1 Slice the tofu into short lengths. Place in a dish

and sprinkle with half the soy sauce, ginger and

garlic. Set aside to let the flavors infuse for a few

minutes.

2 Coat a nonstick skillet or wok with cooking spray

and place over medium heat. When hot, add the tofu and

gently cook on both sides, removing the pieces with a

small spatula as they brown.

3 When the tofu is done, increase the heat to high and

add the frozen vegetables along with the remaining soy

sauce, ginger and garlic. Cook until the vegetables

are heated through and fragrant. Add the scallion

greens and tofu and cook a minute or two. Transfer to

a dish and squeeze lime juice over top before serving.
