Ingredients 4 cups (1 lb/480 g) fresh strawberries, hulled and sliced 3/4 cup (5 oz/150 g) natural cane sugar 1/4 cup (2 fl oz/60 ml) unsweetened apple juice or orange juice 1 1/2 teaspoons agar (sea gelatin) or powdered gelatin 1 teaspoon grated orange zest, optional 1 - vanilla bean split lengthwise, optional Preparation - Estimated cooking time: Over 60 minutes - 1 Combine all ingredients in a large heavy saucepan. Bring to a boil and reduce heat to medium-low. 2 Simmer for 25 minutes, stirring frequently, until preserves are thick. Remove from heat and pour into clean glass jars. (Either remove vanilla bean or keep it in preserves for added flavor.) 3 Cover and refrigerate.
