Guest guest Posted September 18, 2002 Report Share Posted September 18, 2002 Soy Nut Brittle Ingredients 2 cups (14 oz/420 g) natural cane sugar 1 cup (8 fl oz/240 ml) corn syrup 3/4 cup (6 fl oz/180 ml) water - - Cooking spray 2 cups (10 oz/300 g) dry-roasted soy nuts 2 teaspoons pure vanilla extract 1/4 teaspoon baking soda Preparation - Estimated cooking time: 30-60 minutes - 1 In a deep, heavy saucepan, combine sugar, syrup and water. Attach a candy thermometer to the side of the pan. Bring mixture to a boil, reduce heat to medium-low and cook until mixtures reaches 300 degrees F (150 degrees C). Do not stir. Do not touch syrup with your fingers. 2 While mixture is cooking, spray 2 baking sheets lightly with cooking spray. Spread soy nuts on sheets. 3 When mixture reaches 290 degrees F (143 degrees C), remove pan from the heat. Stir in vanilla and baking soda. Be careful 4 Cool to room temperature. Smack pans on a hard surface to break brittle into pieces. Store in a tightly covered tin.
