Guest guest Posted September 20, 2002 Report Share Posted September 20, 2002 Green Tomato Pickles Time: 50 minutes (20 min prep, 30 min cooking) Makes: 6 quarts 6 quarts green tomatoes, quartered 1 cup red bell peppers, sliced 3/4 cup pickling salt 2 quarts onions, chopped 1 cup jalapeno peppers, chopped 6 cups sugar 1 teaspoon mustard seeds 1/2 gallon white vinegar 1. Put tomatoes, red bell peppers, onions and jalapenos in a large bowl. 2. Sprinkle salt over vegetables and let set overnight; drain well. 3. Bring to a boil the sugar, mustard seed and vinegar. 4.
