Guest guest Posted September 20, 2002 Report Share Posted September 20, 2002 Roasted Caraway Potatoes Time: 1 hour 15 minutes (15 min prep, 1 hr cooking) Makes: 8 servings 3 lbs new potatoes, unpeeled and quartered 2 small onions, sliced and separated into rings 1/4 cup olive oil 1 tablespoon caraway seeds 1 1/2 teaspoons salt 1 teaspoon pepper 1. Combine first 2 ingredients in a large heavy duty zip-top plastic bag. 2. Mix together remaining ingredients and pour into plastic bag. 3. Shake well to coat. 4. Place potato mixture in an ungreased 13x9 inch pan. 5.
