Guest guest Posted September 25, 2002 Report Share Posted September 25, 2002 Waldorf Salad Salad: 3 granny smith apples, diced 2 stalks celery, diced 3/4 cup walnuts, chopped 1/2 cup raisins (plump and fresh) Dressing: 1 box (10.5 oz.) firm silken tofu 1 Tbsp. cider vinegar 2 Tbsp. lemon juice 1/2 tsp. salt 2 - 3 Tbsp. Sucanat or brownsugar Blend dressing ingredients. Chop apples, celery and walnuts to relatively the same size. Add dressing to all salad ingredients. Mix well and chill until ready to serve.
