Guest guest Posted September 25, 2002 Report Share Posted September 25, 2002 Coffee Cake Makes one 9 " x9 " cake (approx. 9 servings) Batter: 1 1/4 cup soymilk 3 tsp. baking powder 1/2 cup raisins (opt.) Topping: 3 cups unbleached flour 1 cup sugar 1 tsp. cinnamon 3/4 tsp. nutmeg 1/2 tsp. allspice 1 1/2 stick margarine (3/4 cup) 1/2 cup chopped walnuts (opt.) Mix topping and set 1 cup of it aside. Mix the rest of the topping with the batter, using raisins if desired (I never do). Pour into a 9 " x 9 " cake pan. Sprinkle the reserved topping on top of the batter. Add 1/2 cup chopped walnuts to the topping if desired (I recommend it). Prehead oven to 375 degrees. Cook cake for 30 minutes. Insert a toothpick or knife. If it comes out clean, it's done.
