Guest guest Posted September 25, 2002 Report Share Posted September 25, 2002 Green Herb Rice Makes 3 - 4 servings 1 bunch scallions 1 bunch spinach 1/2 cup parsley 1/2 tsp. dried marjoram (or 2 Tbsp. fresh) 1 tsp. dill (or 2 Tbsp. fresh) 1 Tbsp. margarine 1 tsp. salt 1 cup white basmati rice 2 cups water 1/8 tsp. pepper Clean scallions, spinach, parsley and fresh herbs (if using) and finely chop. Saute these in a saucepan with the margarine. When wilted, add rice, water, and remaining seasonings. Bring to a boil and lower to a simmer.
