Guest guest Posted September 25, 2002 Report Share Posted September 25, 2002 Savory Red Lentils Makes 4 servings 1 cup red lentils 1 onion, chopped 3 cloves garlic, minced 1/2 tsp. salt 3/4 tsp. chili powder 1 tsp. basil and/or dill 1/2 paprika 2 1/2 cups water Pick through lentils, removing stones and other debris. In a medium saucepan, saute onion and garlic in water, about 1/2-3/4 cup. Cook until onion is soft. Add the remaining ingredients, bring to a boil, cover and simmer for 20 minutes, stirring periodically. Serve as a thick soup, or spoon over quinoi or any other light grain.
