Guest guest Posted September 25, 2002 Report Share Posted September 25, 2002 Simple Glazed Carrots Makes 2 side dish-sized servings 3 medium/large carrots 2 tsp. margarine Salt & pepper to taste 1/2 tsp. sugar (any kind) 1/2 cup water Peel carrots and slice lengthwise into approx. 6 pieces. Cut slices into 4 pieces lengthwise (approx. 3 " long). Try to make all pieces about the same thickness, so they finish cooking at the same time. Add to saucepan with water (just enough to steam). Cover, and steam until they're cooked, but not soft, about 5 minutes. Drain, return pan to medium-high temperature, and add remaining ingredients. Stir to evenly coat carrots with margarine. Let them sit and sizzle undisturbed. Every minute or so, stir/shake to dislodge any partially burned carrots, and allow a new layer to carmelize. After just a few minutes, remove from heat and serve.
