Guest guest Posted September 25, 2002 Report Share Posted September 25, 2002 Vegan Coffee Cake Cake Ingredients 1 3/4 Cups Unbleached White Flour 1/2 tsp Ground Cinnamon 2 tsp Baking Powder 1/2 Cup Canola/Vegetable Oil 1 tsp Vanilla 1/2 Cup Sugar 1/4 tsp Ground Nutmeg 1/2 tsp Baking Soda 1 Cup Apple Sauce approx. 1/2 Cup Soy Milk Topping Ingredients 6 Tbsp Unbleached White Flour 1/3 Cup Turbinado Sugar (i.e. Sugar In The Raw) Dash Ground Cinnamon (optional) 3 Tbsp Soy Margarine 1/2 Cup Rolled Oats CAKE: Mix flour, sugar, cinnamon, nutmeg, baking powder and baking soda well. Add soy margarine, apple sauce, vanilla and soy milk and mix thoroughly. Pour ingredients into a lightly oiled baking dish. TOPPING: In a separate bowl, mix flour, sugar, oats, and soy margarine. Add flour and sugar (and a dash of cinnamon, if you like) until you have a crumb topping, then sprinkle on top of coffee cake. NOTE: Finer grained sweeteners will caramelize during baking, instead of giving you a nice crumbed texture, which is why turbinado sugar is recommended.
