Guest guest Posted September 25, 2002 Report Share Posted September 25, 2002 Incredible Veggie Sandwich 1/2 an avocado 2 thick slices of ripe tomato 4 thick slices of peeled cucumber 2 thin rounds of sweet red onion shredded lettuce or spinach handful of fresh sprouts (alfalfa, bean, garlic, whatever) 1 tbsp vegan mayo dijon mustard sea salt and freshly ground black pepper to taste 2 thick slices of your favourite whole grain bread Toast the bread if you like. Spread one piece with the vegan mayo and one piece with the dijon mustard. Pile the veggies onto one slice of bread (it's gonna be a BIG sandwich!) sprinkle with salt and pepper, and place the other slice on top. Cut in half, and eat!
