Creamy Onion Pie

 

2 tbsp extra virgin olive oil

3 large onions, finely diced

1 cup soy or nut milk

1/3 cup firm tofu, crumbled

1 1/2 tsp sea salt

1/4 tsp freshly ground black pepper

& #8539; tsp nutmeg

2 tbsp unbleached flour

1 tbsp couscous

1 unbaked 9 " pie shell

1/2 to 1 cup shredded, non-dairy cheese (I like mozzarella-style

VeganRella best)

 

Sauté onions in oil until soft. In your food processor, blend the

tofu, milk, salt, pepper nutmeg and flour until smooth. When blended,

combine with the onions and add the couscous. Pour into the pie

shell, top with the " cheese " and bake at 350 F for about 30 minutes.

 

Serves 4-6
