Guest guest Posted September 30, 2002 Report Share Posted September 30, 2002 Pasta Presto Smooth and creamy garlic-and-herb cheese adds great flavor to this easy pasta dish. 1 pound bow tie pasta (farfalle) 1 can (15 or 16 oz.) whole tomatoes in puree, chopped 1/2 teaspoon freshly ground pepper, divided 1/4 teaspoon salt 1 package (5 or 5.2 oz.) soft garlic-and-herb cheese (such as Boursin) 2/3 cup pasta water 1/3 cup thinly sliced fresh basil 1. Prepare pasta according to package directions. 2. Meanwhile, bring tomatoes and puree, 1/4 teaspoon pepper and salt to boil in small saucepan. Reduce heat to medium; cover and simmer tomatoes 6 minutes. Stir in cheese, breaking up cheese with spoon. Bring to a simmer. Cover and cook 2 minutes more, until cheese is thoroughly melted. 3. Remove 2/3 cups of water; drain bow tie pasta in colander. Toss bow ties with pasta water, half the sauce, and thinly sliced basil in large serving bowl. Top with remaining sauce and remaining 1/4 teaspoon pepper. Makes 4 servings.
