Sugar Plum Pudding Cake

A recipe that was handed down to me over 25 years ago. It is called

Sugar Plum Pudding Cake. It is absolutely delicious. I make this

cake a tradition at Christmas. It is very moist and rich in flavor.

Hope you enjoy it as our family does.

 

Ingredients

 

3/4 c shortening or oil

11/2 c sugar

1 c buttermilk

21/2 t. baking powder

1 t. nutmeg

1 t. cinnamon

1 c chopped pecans

3 eggs replacers or regular

2 c flour

11/2 t. soda

1 t. salt

1 t. allspice

1 c prunes or dates chopped, raisins

 

 

Cream shortening, gradually add sugar, then buttermilk, eggs. Now

gradually add all dry ingredients until mixture is smooth. Turn mixer

down and gradually add prunes, dates, or raisins. Blend well.

 

You may use well greased and floured loaf pans or tube cake pans for

this recipe. Pour cake mixture in pan and bake for about 40 minutes

at 325 degrees or until toothpick comes out of cake clean.

 

While cake is baking, mix topping for cake.

 

You will need a medium saucepan.

1 c sugar

1 c buttermilk

1/2 c butter or margarine

1 t vanilla

1 T. white corn syrup

 

Put ingredients in saucepan and cook on medium heat stirring

constantly until mixture is almost at boiling stage.

 

When cake is done baking, prick cake with fork so topping can

penetrate into cake. Pour hot topping on cake. Cake will look as

though it is white on top. Yummy
