Guest guest Posted September 30, 2002 Report Share Posted September 30, 2002 Mini Manicotti Prep Time: 35 minutes Ingredients 10 packaged manicotti shells 1/2 pound ground vegetarian sausage like Gimme Lean 1 clove garlic, minced 1 cup shredded mozzarella cheese (4 ounces) 1/2 of a 10-ounce package frozen, chopped spinach, thawed and well drained 1/2 cup ricotta cheese 1/4 cup grated Parmesan cheese 1/2 teaspoon dried Italian seasoning, crushed 1 teaspoon lemon juice 1 beaten egg 1-1/3 cups spaghetti sauce 2 tablespoons shredded Parmesan cheese (optional) Directions: 1.Cook manicotti shells according to package directions. Drain; rinse with cold water. Drain well. Cook sausage and garlic in a large saucepan until cooked through, breaking up sausage with a spoon. Remove from heat. Add mozzarella cheese, spinach, ricotta cheese, the 1/4 cup grated Parmesan cheese, Italian seasoning, lemon juice, and egg; mix well. Carefully spoon mixture into cooked shells. 2. Cut each manicotti diagonally crosswise into three pieces. Place in a 3-quart rectangular baking dish. Spoon spaghetti sauce over. Bake, covered, in a 350 degree F oven for 30 to 35 minutes or until heated through. If desired, sprinkle with 2 tablespoons shredded Parmesan cheese. Makes 15 servings.
