Guest guest Posted October 7, 2002 Report Share Posted October 7, 2002 TOFU SCAMPI 1 lb. firm tofu 4 T olive oil 1/4 cup cornstarch 5 cloves garlic, pressed 2 T minced fresh basil 6 mushorooms, sliced 2 T lemon juice Slice the tofu into 1-inch cubes. Pat dry with a paper towel. Place 2 T of the oil in a shallow dish. Place the cornstarch in a separate shallow dish. Toss the tofu in the oil, covering all sides, then roll in the cornstarch. Place the tofu pieces in one layer on a baking sheet. Bake at 400° for 10 minutes or until crispy. Combine 2 T olive oil, the garlic, basil, and mushrooms in a shallow pan. Saute on medium heat until the garlic is golden brown. Remove from heat. Stir in lemon juice. Toss in the tofu.
