The filling recipe is below, too. Apple Pie Filling #2 is my favorite. Deanne ========================= * Exported from MasterCook * PIE CRUST Recipe By : Man, Woman, and Child Serving Size : 1 Preparation Time :0:00 Categories : Desserts Pastries Pies American Thanksgiving Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup whole wheat pastry flour 1 cup unbleached white flour 1/3 cup oil, light 1 teaspoon salt 1/2 cup ice water Mix dry ingredients. Add oil and water and mix lightly until dough holds together. Wrap in plastic wrap and refrigerate for 30 minutes. Then knead a little. Divide into two slightly unequal balls. Roll out larger ball until slightly larger than pie plate. Lightly flour and then fold into quarters (fold in half, then in half again). Put in pie plate and unfold, gently fitting to pie plate. Add filling. Roll out smaller ball until slightly larger than pie plate. Lightly flour and then fold into quarters. Put over pie and then unfold. Turn under edges using all the dough. (You don't need to trim.) If using an uncooked filling, bake at 375 degrees for 30 minutes. Reduce heat to 325 and bake for 30 minutes longer. Add the rest of the ingredients, except the flour. Add the flour and toss gently, then put in the pie crust. Put on top crust and bake. - - - - - - - - - - - - - - - - - - I sometimes add a little honey or maple syrup to this as a sweetener instead of the frozen apple juice. I usually use more apples--maybe 6 or 7, depending on how large they are. ================================================== * Exported from MasterCook * APPLE PIE FILLING Recipe By : McDougall Cookbook, Volume 2 Serving Size : 1 Preparation Time :0:00 Categories : American Desserts Fruit Pies Pastries Thanksgiving Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 cups apples -- peeled and sliced 1 tablespoon lemon juice 1/4 cup honey 2 tablespoons whole wheat pastry flour 1/2 teaspoon cinnamon 1/4 teaspoon nutmeg Combine the apples with the lemon juice. Mix in the honey and toss gently until coated. Mix flour, cinnamon, and nutmeg. Add to apples and toss again to mix. Place into an unbaked pie crust. Sprinkle with a few raisins or grapenuts, if desired. Bake at 375 degrees for 30 minutes. Reduce heat to 325 degrees and bake an additional 30 minutes. - - - - - - - - - - - - - - - - - - I use this filling like an ordinary filling. I do put on a top crust. Guest guest Posted November 21, 1999 Report Share Posted November 21, 1999 Here's a very basic apple pie. * Exported from MasterCook * My First Apple Pie Recipe By : Family Fun's Cookbook Serving Size : 1 Preparation Time :0:00 Categories : Pies & Pastry Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 unbaked double pie crust 5 cups apple slices 1/2 cup sugar 1 tablespoon all-purpose flour 2 teaspoons apple pie spice OR 1/4 teaspoon nutmeg AND 1/4 teaspoon allspice AND 1/2 teaspoon cinnamon juice of half a lemon 2 tablespoons butter Preheat the oven to 400°. Roll out half the pie crust dough and line an 8-inch pie plate. Trim the edges allowing a slight overhang. Place the apple slices in a large bowl. Add the sugar, flour, apple pie spice, and lemon juice and toss until well combined. Spoon the mixture into the unbaked pie crust and dot with the butter. Roll out the remaining pie dough into a 1/8-inch thickness. Fold the top crust in half, set it over the fruit, and unfold. Crimp the edges with your fingers or press the tines of a fork around the edges to seal. Cut slits in the crust in a decorative pattern. Bake the pie for 40 minutes, or until bubbly and golden brown. Serves 6. Part pie, part cobbler, this dish is a must for all your fall parties and get-togethers. Ingredients 1 cup(s) all-purpose flour 2 tsp sugar 3 tbsp reduced-calorie margarine, chilled and cut up 2 tbsp water, or more if necessary 4 medium apple(s), McIntosh, peeled and thinly sliced 1/4 cup(s) sugar 1 tbsp cornstarch 1/2 tsp ground cinnamon 1/3 cup(s) uncooked old-fashioned oats 5 tbsp all-purpose flour 2 tbsp sugar 2 tbsp reduced-calorie margarine, melted Instructions Preheat oven to 400ºF. To make the crust, combine 1 cup of flour and 2 teaspoons of sugar in a large bowl or food processor. Add 3 tablespoons of chilled margarine and process (or mix together with your fingers if you do not have a food processor) until mixture resembles coarse meal. Add cold water, one tablespoon at a time, and process or mix until a manageable dough forms. Press dough into the bottom and up the sides of a 9-inch pie plate. Pinch the edges to form a decorative rim; set aside. To make the filling, combine apples, 1/4 cup of sugar, cornstarch and cinnamon in a large bowl; toss to coat apples. Arrange mixture in prepared piecrust. To make the topping, combine oats, 5 tablespoons of flour, 2 tablespoons of sugar and melted margarine in a small bowl; sprinkle over apples.
