Guest guest Posted October 8, 2002 Report Share Posted October 8, 2002 Vegetarian Chili Recipe 1 T olive oil 1 garlic clove 1/3 c Spanish yellow onion 1/4 t crushed red pepper flakes 1/2 T ground coriander 1 T ground cumin 1 medium green pepper, 1 medium red bell pepper, seeded and chopped (you can use orange and yellow also) 1 t dried oregano 2 T chili powder 3 medium tomatoes, peeled and chopped or 1 28 oz can tomatoes 1 3/4 c cooked kidney bean, rinsed if canned 1 1/2 c rinsed canned black beans 1 3/4 c rinsed canned pinquitos (small red beans which are the sweeter variety) 1 celery stalk 1/2 c mushrooms 1/2 c ground beef substitute (made from soy protein) Tomato juice as needed 1 T fresh cilantro or parsley Salt and pepper to taste Shredded cheddar cheese or plain low fat yogurt for lower fat Place all ingredients with the exception of the cheese in a pot and bring to a boil then reduce to medium heat for an hour to an hour and a half. ===== Language is an expression of thought.
