CHEESY TORTILLA ROLL-UPS

 

 

2 cups cottage cheese

 

1 cup shredded Monterey Jack cheese

 

1 15 oz. can pinto beans, drained

 

2 eggs

 

1 4 oz. can diced green chiles

 

1/2 tsp. garlic powder

 

1/2 tsp. seasoned pepper

 

12 (8 oz. size) flour tortillas

 

 

 

Mix all ingredients. Place 1/2 cup filling in each

tortilla. Roll up. Place seam side down in sprayed

or lightly greased 13x9 in. baking dish. Cover with

sauce:

 

2 Tbs. cilantro or parsley

 

1/2 tsp. sugar

 

2 15 oz. cans Hunt's Special tomato sauce with tomato

bits, green peppers and onions.

 

2 tsp. crushed dried basil

 

1/4 tsp. cumin seed

 

 

 

In a medium saucepan mix together all ingredients.

Heat to boiling. Reduce heat and simmer 5 minutes.

Bake at 350 degrees for 30-35 minutes or until

thoroughly heated.
