RHUBARB DESSERT 2

 

1st Layer:

 

1 cup butter (slightly melted)

 

2 cups flour

 

2 Tbs. sugar

 

Mix together and pat in 9x13 baking dish. Bake at 10

minutes @350 degrees.

 

 

 

2nd Layer:

 

5 cups diced rhubarb

 

6 egg yolks

 

2 cups sugar

 

4 Tbs. flour

 

1/4 tsp. salt

 

1 cup whipping cream

 

Mix egg yolks, sugar, flour, salt: add whipping cream

and rhubarb. Pour onto baked crust. Bake 40-50

minutes or until firm at 350 degrees.

 

 

 

3rd Layer: (if desired)

 

6 egg whites

 

12 Tbs. sugar

 

2 tsp. vanilla

 

dash of salt

 

Beat egg whites until stiff: add sugar gradually. Add

vanilla and salt. Spread over top of baked custard

filling. Bake 350 degrees for 1-15 minutes. Enjoy!
