You can find vegetarian soy pepperoni in refrigerated health food sections in many larger grocery stores, or in your favorite natural food grocery. 2 Tablespoons olive oil 1-1/2 Tablespoons dried minced garlic 4 medium russet potatoes, quartered and sliced 1/4 cup chopped flat-leaf parsley 1 cup veggie soy pepperoni slices, cut into half circles olive oil spray as needed Heat oil and garlic in Dutch oven for one minute. Add potatoes and parsley and cook for 6 minutes, stirring. Add pepperoni and cook additional 15 minutes, or until potatoes are tender. Carefully add additional cooking oil spray as necessary.
