Guest guest Posted October 11, 2002 Report Share Posted October 11, 2002 Low Fat Bread Pudding Time: 55 minutes (10 min prep, 45 min cooking) Makes: 8 servings or 1-8 inch square pan 6 slices day-old bread (better if low in fat) 1 tablespoon oil 1/2 cup raisins (optional) 8 egg whites 2 cups low-fat milk 1/4 cup white sugar (or sweetner) 1 teaspoon ground cinnamon 1 teaspoon vanilla extract 1. Preheat oven to 350 degrees F (175 degrees C). 2. Break bread into small pieces into an 8 inch square baking pan. 3. Drizzle melted butter or margarine over bread. 4. If desired, sprinkle with raisins. 5. In a medium mixing bowl, combine egg whites, milk, sugar, cinnamon, and vanilla Beat until slighty foamy. 6. Pour over bread, and lightly push down with a fork until bread is covered and soaking up the egg mixture. 7.
