Guest guest Posted October 11, 2002 Report Share Posted October 11, 2002 Wild Rice with Pecans and Mushrooms Time: 1 hour 10 minutes (10 min prep, 1 hr cooking) Makes: 8-10 servings 1/2 lb wild rice 3 cups water 1 1/2 teaspoons salt 1 1/2 cups sliced mushrooms 1/2 cup butter fresh ground black pepper (optional) 1/2 cup coarsely broken toasted pecans chopped parsley (to garnish) 1. Soak rice overnight in water. 2. Drain, wash well, and put in a medium saucepan. 3. Cover with water, add salt, and bring to a boil. 4. Reduce heat to low, cover, and cook about 1 hour, or until tender; drain if necessary. 5. Saute mushrooms in butter, add pepper, and pour over rice. 6.
