Blanching Almonds

 

The dark skin on whole almonds can sometimes add a bitter flavor.

They also may make an undesirable visual presentation in some recipes.

Simply add the almonds to a saucepan and cover with water. Bring to a boil,

drain, and shock with cold water. Squeeze the almonds and most skins will come

right off. Place the nuts on a cookie sheet at 350 for 5 minutes to crisp them

back up.
