The body takes a longer time to process more complex carbohydrates, such as oatmeal or lentils, while carrots and bananas cause blood sugar levels to rise more rapidly. Combined with other foods however, this spike in blood sugar levels does not occur so there is no need to miss out on the nutritional benefits!
