Potato Soup

 

INGREDIENTS:

4 large potatoes, diced

1 large onion, diced

3 stalks celery, cut up

1 large carrot, diced

1/2 t salt

1 can skim milk (12 oz)

2 T reduced fat margarine

pepper to taste

 

PREPARATION METHOD

Place first 5 ingredients in a 4 quart saucepan. Cover with water

& boil gently until carrots are soft. Do not drain - mash together

so that you have a lumpy mush. Add milk, margarine and pepper.

Makes 4 servings.

Protein: 10 g

Carbohydrates: 44 g

Fat: 5 g

Cholesterol: 4 mg
