Level of Difficulty | Easy Ingredients 1/3 cup(s) all-purpose flour 1/4 cup(s) sugar 1/2 cup(s) plain fat-free yogurt 2 large egg(s) 1 tsp vanilla extract 30 oz canned pears, packed in light syrup, reserve 3/4 cup of liquid from can 3 tbsp packed brown sugar Instructions Preheat oven to 375°F. In a blender or food processor, blend flour and granulated sugar until combined. Add yogurt, eggs, vanilla and pear juice; process until smooth. Coat a 9-inch pie plate or quiche dish with cooking spray. Arrange pears in dish; pour batter over fruit and sprinkle with brown sugar. Bake for 25 to 30 minutes until center is just set when gently shaken. Cool on a wire rack for 30 minutes, cut into 8 pieces and serve warm. (This dish can also be made with fresh pears and water instead of canned pears and juice. Simply peel, halve and core enough pears to cover the bottom of the pie plate — place cut side down — and substitute 3/4 cup of water for the pear juice.)
