Serve with baked tortilla chips; mango slices tossed with lime juice. Ingredients 1 - vine-ripened tomato, chopped 1/2 cup of your favorite salsa 2 - scallions, sliced 1 - can black beans (15 oz.), drained and rinsed 2 cups shredded romaine lettuce 1 cup fresh or frozen corn kernels Preparation - Estimated cooking time: under 30 minutes - 1 Combine tomato, salsa and scallions in a bowl. Stir in beans. 2 Spread romaine in a shallow serving dish. Top with bean/salsa mixture. 3 Microwave corn on High for 30 seconds. Distribute over salad.
