Guest guest Posted October 21, 2002 Report Share Posted October 21, 2002 Macaroni salad Serves 8 1 1-pound box eggless elbow macaroni 2 tomatoes, cut into small pieces 1 onion, diced 1 cucumber, peeled, sliced, then cut into quarters 1/4 head cauliflower, broken into small pieces 1 carrot, grated Vegenaise (Follow Your Heart brand), Nayonaise (Nasoya brand), or other eggless mayonnaise (or use the recipe that follows) Onion salt Prepare macaroni according to box directions, rinse and drain. Add 3 heaping tablespoons Vegenaise or half of the vegan mayonnaise to the macaroni and mix well. Mix the vegetables together in a separate bowl. Add another 3 heaping tablespoons Vegenaise or the other half of the vegan mayonnaise to the vegetables and mix well. Mix the vegetables and the macaroni together. Add onion salt to taste and mix.
