Guest guest Posted October 21, 2002 Report Share Posted October 21, 2002 Orange Bowls Serves 4 or 8, depending on whether it is served as an entree or a side dish. 1 package (14 oz.) Gimme Lean (Lightlife brand) or other ground beef substitute 3 tablespoons or more canola or olive oil 1/2 onion, diced 1/2 cup button mushrooms, cut into small pieces 8 oz. mild salsa (or medium if a spicier dish is preferred) 4 oranges Preheat oven to 350 degrees. Thaw the Gimme Lean and saute (in a non-stick pan) to brown in the oil as you would ground beef. (It does not need to be heated to a particular temperature. Brown it and break it up into a ground beef consistency.) You may need to add more oil, but add as little as possible. Add onion and mushrooms and lightly sautÈ. Add salsa and mix. Heat the mixture throughout and leave on low heat. Cut the oranges in half. Hollow out each orange, creating a bowl out of the orange skin, leaving a little of the orange to flavor the filling (Save the oranges for breakfast!) Divide the Gimme Lean mixture among the 8 orange halves. Seal each orange separately in aluminum foil and bake for 35 minutes. Remove the foil and serve.
