Level of Difficulty | Moderate A chocolate wafer crust and sweet creamy filling make these rich cheesecake bars worth every bite. Ingredients 1 serving(s) cooking spray, or enough to coat pan 1 cup(s) milk chocolate chips 4 piece(s) chocolate wafer(s) 2 large egg white(s) 1/2 cup(s) sugar 8 oz neufchatel cheese 1/2 cup(s) fat-free egg substitute 2 tbsp unsweetened cocoa 1 tsp vanilla extract 3/4 cup(s) light sour cream Instructions Preheat oven to 325°F. Coat a 9-inch square baking dish with cooking spray. Melt chocolate chips in a double boiler and let cool slightly. Place wafers (or chocolate graham crackers) in a plastic bag and crush with a rolling pin to form fine crumbs; sprinkle over bottom of prepared pan. With an electric mixer, whip egg whites until soft peaks form. Slowly add 1/4 cup of sugar; beat until stiff and set aside. In another bowl, beat cheese with remaining sugar until smooth. Add egg substitute; beat until smooth and scrape down the sides as needed. Add cocoa and cooled chocolate; beat until smooth. Add vanilla and sour cream; beat until smooth and scrape down the sides as needed. Fold in egg whites. Pour into prepared pan and bake until firm, about 45 minutes. Cool and slice into 12 pieces.
