Vlt with Herb Mustard

 

 

This is a remake of the classic BLT.

 

 

Ingredients

 

 

1/2 cup yellow mustard

1 tablespoon snipped fresh or dried chives

1 tablespoon chopped fresh parsley

1/8 teaspoon cracked black pepper

8 - leaves romaine, washed and dried

8 - slices fat-free bread of your choice

4 - Roma or other plum tomatoes, sliced lengthwise into 4 equal

slices

1 pound fat-free tofu bologna slices

 

 

Preparation - Estimated cooking time: Under 30 minutes -

1 Place mustard in a small bowl.

2 Add chives, parsley and black pepper to mustard and mix well. Set

aside until ready to use.

3 Tear romaine leaves to fit bread slices. Set aside.

4 Place 4 slices of bread on your work surface. Spread bread with

herb mustard. Add to each slice 1/4 of the bologna slices, 4 slices

of tomato and 2 romaine leaves. Top with another slice of bread. Cut

sandwiches in half and serve.
