Ingredients 2 - ripe mangoes 1 - vanilla bean 2 - small ripe papayas 1/4 teaspoon ground cardamom 1 - ripe pineapple 2 - ripe bananas 3 - ripe kiwis 8 - ripe strawberries Preparation - Estimated cooking time: Under 30 minutes - 1 To slice a mango, stand one up and slice the skin and flesh from each side as a single piece, just clearing the long, flat seed. Remove peel with a knife and slice flesh into long strips. Place in a bowl. Repeat with the remaining mango. 2 Slice vanilla bean lengthwise, scrape out tiny seeds and add to mangoes. Toss gently. Save vanilla bean for another use. 3 Peel, seed and slice papayas. Place in a second bowl. Sprinkle with cardamom and toss gently. 4 With a long knife, cut away the pineapple peel in strips, cutting deep enough to remove the eyes with the skin. Cut into quarters lengthwise and cut away core. Slice quarters. 5 Peel and slice bananas on the diagonal. 6 Peel kiwis. Cut a decorative diamond pattern all around the outside. 7 Slice strawberries. Arrange the fruits on a large platter.
