Guest guest Posted November 4, 2002 Report Share Posted November 4, 2002 Sugar Free Royal Icing (Makes 1/2 cup of icing) 1/2 cup confectioners' sugar, sifted 6 packets Sweet 'N Low® 1 Tbsp. egg white 1/4 teaspoon cream of tartar In a mixing bowl, beat all ingredients on low speed with mixer until blended. Increase speed to medium for 5 minutes until very frothy. Increase speed to high and beat until mixture is bright white, well-blended and thick. Scrape down sides and bottom of bowl to incorporate all ingredients. Transfer mixture to pastry bag fitted with small round tube and use immediately, or place in a sealed container. The mixture will harden unless kept covered. Hint: To measure egg white, place egg white in a small bowl and beat with a wire whisk or fork until frothy. Then pour the desired amount into a measuring spoon. Remaining portion may be frozen and thawed when needed.
