Guest guest Posted November 6, 2002 Report Share Posted November 6, 2002 Meat-Free Meat Loaf With Good Gravy (Preparation 1 hour 15 minutes) 1 tablespoon olive oil 1 small onion, minced 1 small carrot, grated 4 vegetarian burgers, thawed 1/2 cup ground walnuts 1 cup fresh bread crumbs 1 cup cooked brown lentils, drained well 1/4 cup soft tofu 2 tablespoons tahini 1 tablespoon soy sauce 1 tablespoon minced fresh parsley leaves Salt and freshly ground black pepper to taste 2 cups vegetable broth 2 1/2 tablespoons soy sauce 1 teaspoon minced fresh thyme leaves (1/2 teaspoon dried) Salt and pepper to taste 2 tablespoons cornstarch dissolved in 3 tablespoons water 1/4 cup of plain soy milk Preheat the oven to 350 F. Lightly oil a 9-by-5-inch loaf pan. Heat the oil in a small skillet over a medium flame. Add the onion and carrot, then cover and cook, stirring occasionally, until softened, about 5 to 7 minutes. Set aside. Chop or crumble the vegetarian burgers and place in a large bowl. Add the walnuts, bread crumbs and the onion mixture. Place the lentils in a food processor and pulse until coarsely chopped. Add to the bowl of veggie burgers. In the food processor, combine the tofu, tahini, 1 tablespoon soy sauce and parsley. Pulse until well blended. Stir into the veggie burger mixture, then season to taste with salt and pepper. Transfer the mixture into the loaf pan and smooth the top of the loaf. Bake until it is firm and golden brown, about 40 to 50 minutes. Let cool for 15 minutes before serving. Prepare the gravy while the loaf cools. In a small saucepan, combine the broth, 2“ tablespoons soy sauce, thyme, and salt and pepper to taste. Bring to a boil over a high flame. Reduce the heat to low and whisk in the cornstarch mixture. Return to a boil while whisking until the sauce thickens, about 1 minute. Slowly whisk in the soy milk. Do not allow to boil again. To serve, slice the loaf and ladle gravy over each slice.
