Guest guest Posted November 6, 2002 Report Share Posted November 6, 2002 Spicy Peanut Dip and Tofu-Vegetable Spread 1/2 cup peanut butter 1/2 cup prepared salsa 3 tablespoons fresh lemon juice 1 teaspoon sugar 1/2 teaspoon ground cumin Several drops Tabasco sauce, to taste Pinch of salt, to taste Place all ingredients in a food processor fitted with a metal blade and process until well blended. Alternatively, mash all the ingredients together in a medium-size mixing bowl. Add more lemon juice or tabasco sauce, if desired. Tofu-Vegetable Spread ....a pate' in minutes! 1/2 pound firm regular tofu 2 tablespoons tahini 1 tablespoon sweet white miso 2 teaspoons tamari (or to taste) 1/2 cup shredded carrot 1/4 cup sliced scallions 1) Steam or simmer the tofu in water for 10 minutes. Cool. 2) Crumble the tofu and place it in a food processor fitted with a metal blade. Add the tahini, miso, and tamari and process into a thick paste. Add the carrot and scallions and pulse until they are evenly distributed.
