Guest guest Posted November 6, 2002 Report Share Posted November 6, 2002 Zucchini Pancake -- 1 zucchini, grated 1 egg 1 to 2 Tbsp flour ½ tsp baking powder Dash of salt to taste Sunflower or sesame seeds (optional) Beat the egg and add to grated zucchini. Fold in the flour, baking powder, and salt. The longer you stir the mixture the moister it will become. When it is holding together, spread the batter onto a hot oiled griddle. Sprinkle top of batter with seeds if desired. When bottom is lightly browned and pancake is holding together well, flip it over and cook other side.
