Guest guest Posted November 6, 2002 Report Share Posted November 6, 2002 Onion, Mascarpone and Blue Cheese Orzo serves 4-5 1/2 pound uncooked orzo pasta 1/2 tablespoon butter 1 tablespoon olive oil 1 small onion, chopped 2 ounces crumbled blue cheese 1-1/2 ounces mascarpone cheese* 1 cup shredded spinach pepper Cook pasta according to package directions, drain. Meanwhile, heat butter and oil in a skillet, add onions and sute until golden; drain on paper towels. Combine blue cheese, mascarpone and onion. Add spinach and the warm pasta.
