Guest guest Posted November 6, 2002 Report Share Posted November 6, 2002 Baigain Bharta -- Indian Eggplant -- 1 tsp asafetida* 1 green chili, sliced 1 tsp mustard seed 1 Tbsp salt 1 medium onion, chopped fresh cilantro, chopped 1 large eggplant vegetable oil Grill the eggplant on an outdoor grill or on a gas stove indoors. Turn a couple of times until the skin is burned and the eggplant is cooked all the way through. Don't be afraid, you can put the eggplant right on the flame, this gives it a nice smoky flavor Put in a dish and let cool. When it is cool enough to handle, remove the skin. Heat a tbsp of oil in a frying pan and add mustard seed. Let the seeds pop in the oil and then add the chopped onion. Sauté until the onion has become translucent. Add the eggplant, asafetida, green chili, and salt. Cook for 5 or 10 minutes. Remove from the heat and add the chopped cilantro, and enjoy. This dish is usually eaten with flat bread-either chapatis or naan. You can try it with pita. *Asafetida is an Indian spice with a strong taste that is said to aid digestion.
