Guest guest Posted November 6, 2002 Report Share Posted November 6, 2002 Parsley New Potatoes -- 1 1/2 pounds small new red potatoes 1 Tbsp vegetable oil 1 medium onion, chopped 1 clove garlic, crushed 1 cup vegetable broth 1 cup chopped fresh parsley 1/2 tsp black pepper Boil whole potatoes until fork will easily pierce, but do not over cook. Drain and cool. In a large skillet sauté onion and garlic in oil for 5 minutes over medium heat. Add broth and 3/4 cup parsley and mix well. Place potatoes in skillet and simmer covered for 10 minutes. Add pepper and stir. Serve with remaining parsley sprinkled over the top.
