Guest guest Posted November 6, 2002 Report Share Posted November 6, 2002 Egg-Free Chocolate Mousse -- 6 Tbsp water 3 tsp agar-agar 4 tsp Ener-G Egg Replacer 6 Tbsp soymilk 1 1/4 cup sugar 1/4 cup melted soy margarine 1/2 cup plus 2 Tbsp unsweetened, dutch cocoa 1 Tbsp Xanthan Gum Put water in a small sauce pan and sprinkle agar flakes onto the surface. Do not stir or heat. Allow agar to soften for 10 minutes. Set aside. In a bowl whip egg replacer and soymilk together until frothy. Slowly add sugar and mix until stiff. Melt margarine and stir in cocoa. Add cocoa mixture to whipped egg replacer, slowly add xanthan gum and set aside. Bring water and agar to a boil slowly, simmer until agar is completely dissolved. Pour agar into bowl with other ingredients. Whip until thick. Refrigerate until firm.
