Coconut Chapatis

 

Ingredients

1 cup unbleached flour

1/4 teaspoon salt

1/2 cup coconut milk (shake before measuring)

 

Directions:

Mix flour and salt. Add coconut milk slowly. Knead. Let dough rest in

bowl, covered, for 15 minutes. Separate into 6 pieces. Roll out flat

to size of skillet. Cook in a non-stick skillet over medium heat

approximately 3 minutes on each side.

 

 

This is a favorite. I make it 3 or 4 times a week. I recently noticed

the price of bread has gone up to $2.19 a loaf! I can eat this bread

all month for that amount.
