Guest guest Posted November 12, 2002 Report Share Posted November 12, 2002 Easy Tomato Sauce with Roasted Vegetables If you're grilling vegetables, grill a few extra and use the following day to make this easy pasta sauce. It's delicious on pasta or with grilled salmon or chicken. Ingredients - - Olive oil cooking spray 1 - small eggplant, cut into small dice 1 - small zucchini, cut into small dice 1 - small red, yellow or green bell pepper, cut into small dice 1 - small onion, cut into small dice - - Sea salt, to taste 1 26-ounce (780-g) jar plain spaghetti sauce 2 cloves garlic, minced 3 tablespoons mixed chopped fresh herbs-parsley, basil, chives, oregano, marjoram or thyme Preparation - Estimated cooking time: Under 30 minutes - 1 Preheat the oven to 425 degrees F (210 degrees C). Spray a large baking sheet with cooking spray. Spread eggplant, zucchini, bell peppers and onions on the baking sheet and spray with cooking spray. Sprinkle with salt. Roast until soft and browned, about 15 minutes, turning midway through the roasting. 2 In a large saucepan, heat spaghetti sauce. Stir in roasted vegetables, garlic and herbs. Simmer for 5 minutes to blend flavors. Nutritional Analysis Number of Servings: 4 cups (32 oz/960 g); serves 4.
