Guest guest Posted November 15, 2002 Report Share Posted November 15, 2002 Green Beans w/Walnuts 2 pounds haricots verts (green beans), trimmed 1 teaspoon olive oil 3/4 ounce shallots, minced 2 garlic cloves, minced 1/2 ounce walnuts, toasted and chopped 1/4 teaspoon salt 1/8 teaspoon black peppercorns, crushed Cook haricots verts in simmering water until tender. Drain beans, reserving 3 ounces of liquid. Heat oil in a small saute pan. Add shallots and garlic. Saute until shallots are translucent. Combine haricots verts with shallots, garlic, reserved cooking liquid, walnuts, salt and peppercorns. Toss to coat and serve. Serves 10. Each serving contains approximately 45 calories, 1.5 gm fat (30 percent calories from fat), 0 mg cholesterol and 55 mg sodium. ===== Language is an expression of thought.
