It's smooth and creamy when blended with liquid ingredients. In this recipe, tofu replaces the eggs and milk to make a delicious addition to any holiday dinner. Preparation time: 15 minutes Cooking time: 40 minutes Yield: One 9-inch pie (8 slices) Ingredients and directions: 15-ounce can pumpkin (about 2 cups) 8 ounces silken firm tofu 1/2 cup pure maple syrup 1/2 teaspoon ground ginger 1 teaspoon cinnamon 1/4 teaspoon nutmeg 1 tablespoon flour 9-inch pie shell 1/4 cup chopped pecans Preheat the oven to 350 degrees. Place the pumpkin, tofu, maple syrup, ginger, cinnamon, nutmeg, and flour in a blender or food processor and process until smooth. Pour the pumpkin mixture into the pie shell.
