Level of Difficulty | Easy Sugary-sweet pecans add just the right touch to these creamy spuds. Enjoy them for dessert or serve them as a delicious side dish to your Thanksgiving meal. Ingredients 1 serving(s) cooking spray (5 one second sprays), butter-flavored 5 large sweet potato(es), peeled, quartered, boiled and mashed 2 tbsp reduced-calorie margarine 1/2 cup(s) fat-free egg substitute 1 tsp vanilla extract 1/2 tsp ground cinnamon 1/2 cup(s) sugar 1/4 tsp table salt 2 tbsp half-and-half cream 1/2 cup(s) packed light brown sugar 1/2 cup(s) pecan halves, finely chopped (about 2 ounces) Instructions Preheat oven to 350°F. Coat a 13 X 9-inch baking dish with cooking spray. In a large bowl, mix together potatoes, margarine, egg substitute, vanilla, cinnamon, granulated sugar, salt and half-and-half. In a small bowl, mix together brown sugar and pecans. Pour potato mixture into prepared baking dish. Sprinkle top with brown sugar-pecan mixture. Spray top of casserole with cooking spray.
