Potato and Peppers Frittata

 

 

Quick as a whisk, you've got a delicious, healthy

dinner -- ready to serve in 20 minutes Serve with

tossed green salad and your favorite low-fat

vinaigrette. Fresh strawberries are at the markets now

-- try some for a delicious dessert.

 

 

Ingredients

 

 

2 - small Yukon Gold potatoes

1 cup sliced red or green bell peppers

2 tsp. olive oil

1 - large egg

3 - large egg whites

1/4 cup grated reduced-fat Havarti or Gruyère cheese

 

 

 

Preparation - Estimated cooking time: under 30 minutes

1 Preheat oven to 350 degrees F. Cut the potatoes into

very thin slices. Microwave (with a little water) on

High for 2 minutes, then drain. Sauté in 1 teaspoon

olive oil, until soft.

2 Coat a small baking dish with the remaining 1

teaspoon oil. Layer potatoes and peppers in dish.

Whisk together egg, egg whites, cheese, salt and

pepper.

3 Bake for about 20 minutes, or until eggs are just

set.
