Guest guest Posted November 27, 2002 Report Share Posted November 27, 2002 Whipped Sweet Potatoes 2 pounds Sweet potatoes, peeled and cut into two-inch pieces 4 Tablespoons Butter Milk Salt and pepper Place the sweet potatoes in a large pot and cover with water. Bring to a boil and cook until soft. Drain. Place in a mixer bowl. Add the butter and a little milk. With the whipping attachment on, start the mixer at low speed. Gradually increase the speed, adding milk as needed. Stop when the potatoes are smooth and light. Check the seasonings. Serve warm with butter.
