Guest guest Posted December 4, 2002 Report Share Posted December 4, 2002 Kwanzaa Sweet-potato Pie Preparation time: 30 minutes Cooking time: 45 minutes Makes one 9-inch pie Ingredients: One 9-inch pie crust 1 large sweet potato 3/4 cup (1 1/2 sticks) butter, melted, cooled 1/2 cup milk 3/4 cup sugar 1 egg, beaten 1 teaspoon ground nutmeg 1 teaspoon flour 1/2 teaspoon baking powder Heat oven to 400 degrees. Line pie crust with foil and then add pie weights or dried beans to foil. Bake pie crust for 10 minutes. Remove foil and beans; cool on wire rack. Reduce oven temperature to 350 degrees. Peel sweet potato. Cut into 1-inch pieces. Cook in boiling water until soft, about 10 minutes. Mash sweet potatoes in food processor or by hand in a medium bowl. Stir in butter and milk, then stir in remaining ingredients. Pour mixture into prebaked pie crust. Bake until pie barely jiggles in the center, 45 to 60 minutes. Cool on wire rack.
